My first plate of rice and beans with stewed chicken... made with coconut
milk, it was delicious. Many locals admit to being raised on the combination.

And I had that first plate, my first meal, my first time on Ambergris Caye,
at the Barrier Reef Hotel.
Angie seated us and Leslie was waiting tables. We were an hour off the plane after a red eye flight from Portland - Dallas - Miami - Belize. We were boxed, dazed, glazed and tired stupid. Leslie laughed, enjoyed us, and made us feel at home. He was the real landing after the flight and that single point where you can say, yes, that's when I fell in love with Ambergris Caye.
