This recipe for Tamales was given to me by my Aunt Jenny (Mom's sister). It is spicy and flavorful and soft in texture. I would consider this recipe the most difficult from the collection in my book. All the other recipes are fairly easy and simple. You can add fiber to the tamales by adding spinach when cooking.
