It depends on what price range you're looking for as to where to stay. Here's a web site for ideas. We stayed at Holiday Hotel in 1998, our first time to Belize (Ambergris Caye). It was in town, close to everything, one room, no TV or pool, but clean. The second time we stayed at Playador now known as Exotic Caye's Hotel. They have nice cabanas, pool and nice beach. It's about 1/4 mile from town (within walking distance). We've made eight trips in all. Since then we bought a condo at Belize Yacht Club, but rent it out year round to a nice couple who live there, so we stay at another unit. It's quite there, a small pool but no real beach. Ramon's is nice with a good size beach. Banana Beach or Sunbreeze Hotel are also good choices.

If you choose Ambergris Caye, there's probably more to do. Most all resorts have BBQ nite with entertainment. There is a small casino & at least two night clubs. Wednesday night is the "World Famous Chicken Drop" at the Pier Lounge. They put a large Bingo card in the sand, force feed a chicken, and people bet on the number where they think it will do it's business.
There's a lot of great restaurants. Middle Street has a lot of good ones. Corina Caramba, Reef Restaurant, & Micky's are favorites of the locals. We find that if you dine where the locals dine, you get the best food for the best price. Elvi's is nice, also on Middle St. Celi's & Fido's are good choices.
