Peter Singfield of Xaibe Village is making virgin coconut oil, if anyone want to buy some. We are working on a website for it, but if you can't wait, just email him at snkm@btl.net. I got a few liters, divided them up and gave them to friends. Great for cooking, for curing skin (incredible how it fixes pimples or skin trauma such as post tattoo), for making salad dressings that are incredible. Great oil, super healthy and anti-rancid, lasts forever. i like just eating a lil too, great for vitamins. tastes like the essence of coconut. We're putting together lots of material on uses, but I recommend you just get some now and not mess around. Price is $25 US per liter delivery included -- but minimum order of 4 liters. I would buy this stuff but the payment process is too onerous. I live in a little mountain town and shlepping to banks, etc. is too much trouble, takes hours. Western Union takes as much as 20% of the "price" of anything, way too high. The smaller your order, the higher the fee for Western Union. Also I would not send a cashier's check through the mail to Belize. There have been many instances of theft from the Belizean mail system (I sent a $700 check once and by the time it hit my bank it was a $7000 check!!!) And others have told me of similar experiences. Recourse when cashiers checks go astray is very difficult. I do all my shopping online or by catalogue. The key is ease of use. You can't make the order and payment process dependent on snail mail and intermediaries that the buyer has to visit. Peter needs to come up with a way to accept online payment, either via credit card or through some kind of payment service that can be used internationally. Having a merchant account may be too costly for a small businessman, but he should check out PayPal and c2it ( www.paypal.com and www.c2it.com ) They do charge fees (c2it to Belize takes about a 7-8% hit due to profit on foreign exchange but that's cheaper than Western Union. I am not sure what the international exchange profit is on international PayPal but its worth looking into.)

yeah, its not the easiest payment, but sometimes good stuff involves a lil more, or you just miss out.
my daughter used some to fry eggs this morning, and said it was like dessert for breakfast!

Thanks Marty, but I went ahead and ordered it, using Western Union's online service. The fee is $15. This is a lot cheaper than what you pay to do it by phone: They wanted $25 (a 25% fee!!) to do it by phone! What a ripoff! I also had to demand a supervisor because they refused at first to accept my online transaction unless I called and gave a customer service operator my social security number, past addresses, etc. I had to call and explain to the idiot customer service rep that this is a violation of the FCPA and violates their merchant agreement with VISA. Then I had to explain this to the idiot's supervisor. So it was a hassle, but I guess the coconut oil is worth it! (But its not worth a 7 hour drive to my credit union for a cashier's check!) Peter should investigate wwwc2it.com and www.paypal.com; it will get him more business. People are in a hurry these days and want to be able to pay easily online. I am going to give a couple of bottles away too. We have a lot of coconut trees on our land in Panama, maybe my husband can learn how to make this stuff when we get there. Actually, what I want is to know how to mix coconut with chocolate! There is a book out about virgin coconut oil, its supposed to be very good for you but its hard to get. I bet it will be good for my hair too, what with all the peroxide it gets!!!

its SUPER good for your hair... we have a lil info on that, getting more... Coconut oil can be used for a dry scalp, and as a hair conditioner as and when required. It can be used as follows:- Warm the Coconut oil in the jar, in a bowl of hot water, until it is in a liquid form. After checking that the temperature is not too high, apply some liquid Coconut oil to the scalp and rub in well. Place a shower cap (or plastic bag, held in position with a towel) over the hair, so that the scalp is kept warm. After approximately 15 minutes, apply plenty of shampoo before wetting the hair. Work shampoo well into scalp and hair to break down the oil. Lovey & Thurston, I would love to try your soap recipe! I just paid $3.50 a bar to a local "goat lady" that makes Goat soap with rosmary & lavendar...it is great, but the idea of Coconut sound much better! Mexicana

Mexicana, send me your email address, and I'll give you the recipe. It makes alot, so you'd better be prepared to share with friends. Made one with the herb tansy, which is a natural insect repellant and tried it out in Belize. At least I thought it worked!

Will try to simplify this recipe and see if I can post it on the board for anyone who wants to give it a try. I make it for sale a Xmas, with the proceeds going to the local food pantry. We sell about 3,000 bars, so the recipe I use is much larger than you would want. One of the best sellers has been one that has cedar and balsam for a doggie shampoo, I call it "Bowser Bath". Lots of pampered poochies out there. If anyone is feeling ambitious it would make a great fund raiser for Saga.

If you can make this outside,do. The initial stages are highly causic.Have some vinegar handy in case you get any on your skin. Mix one can of lye (red devil lye, available in grocery, DON"T use Draino.) Place in a heat proof container like pyrex. and add 2 3/4 pts. water. Stir until dissolved. Meanwhile melt 5 1/2 lb. lard or shortening (not veg. oil). Let both mixtures cool to 95 degrees, they should be within several degrees of each other. Add 1 cup. cocnut oil. Now mix the two in a large enamel kettle.(Add the water mix slowly) Add 3/4 cup borax and stir constantly. The mixture will began to thicken to a honey consistency.(Called "tracing".) Now you can add essential oils, such as lavender, rosemary etc. Also experiment with oatmeal and cornmeal. Now it is ready to pour. You can use old shoe boxes, milkcarton etc. lined with waxed paper or and old tee shirt. Cover with a blanket and let stand overnight. Cut in when it is set but not hard. The soap must sit for about 3wks before it can be used. This is because it is undergoing a process called saponification which change the lye content. (All soap is made from lye). It is a very mild soap. If you avoid using perfumes for scent, even better as it is great for people who are allergic to artificial scents. Coloring can also be added before going in the molds.

I have also read that lauric acid is helpful in moderating both hypo and hyper thyroid conditions and helping to bring both closer to normal. I am sure willing to try it. It can't hurt and everyone who has tried it says its delicious. I'm looking forward to finding ways to mix it with pure cocoa for chocolate snacks.

This is all great and wonderful. Just gotta keep the money making people from diluting the coconut oil somehow. Quality control is needed to keep it PURE.
The aloe vera market has been so diluted, it is hard to really find a measurable amount of aloe vera in most products.

FRAGRANT CRISPY DUCK
This is a big-deal dish. But the numerous steps, all easy, transform the duck into a wonder of subtle spiciness. We had this dish in Xi'an, where five-spice powder in the rub and the dipping salt were lovely touches. Active time: 1 1/4 hr Start to finish: 1 1/2 days
1 (4 1/2- to 5 1/2-lb) fresh Pekin duck (sometimes called Long Island duck) 6 tablespoons toasted Sichuan-peppercorn salt 1 tablespoon five-spice powder 2 tablespoons Chinese rice wine or dry Sherry 6 (1/8-inch-thick) slices fresh ginger 4 scallions, cut into 2-inch pieces About 12 cups corn, peanut, or canola oil 2 tablespoons dark (black or mushroom) soy sauce 1/3 cup all-purpose flour
Special equipment: a 10-inch glass pie plate or shallow heatproof bowl; a 16- to 18-inch wok with a lid and a 9 1/2- to 10-inch round metal rack, or a 14-inch wok and same rack plus a large pot (at least 12 inches wide and 5 inches high); long oven mitts; a bulb baster; an electric fan; 2 large Chinese mesh spoons or large slotted spoons
Prepare duck: Cut off wing tips with poultry shears or a sharp knife. Remove and discard excess fat from body cavity and neck, then rinse inside and out. Pat dry inside and out and press on breastbone to break it and flatten duck.
Marinate duck: Heat peppercorn salt and five-spice powder in a dry skillet over moderate heat, stirring, until hot. Measure out 3 tablespoons and rub 1 tablespoon in body cavity and 2 tablespoons over outside of duck, including under wings and legs. Reserve remaining spiced salt for serving with duck.
Put duck in a bowl and marinate, covered and chilled, 8 to 24 hours.
Steam duck: Drain any liquid from cavity and put duck in glass pie plate. Rub rice wine over duck. Smash ginger and scallions with flat side of a large heavy knife, then put one third in duck cavity and scatter remainder over duck.
Fill wok with enough water for rack to sit 1/2 inch above water and bring to a rolling boil. Wearing oven mitts, put pie plate with duck on rack over boiling water and cover wok with lid.
Reduce heat to moderate and steam duck 2 hours, checking every half hour to siphon off fat and juices from around duck and in cavity with bulb baster and replenishing boiling water as necessary.
Wearing oven mitts, remove pie plate from steamer. Discard ginger and scallions. Drain duck and cool in pie plate 15 minutes.
Air-dry duck: Slide duck onto a rack set over a baking sheet (to catch juices) and pat dry with paper towels. Position duck in front of a fan and air-dry 2 hours, making sure air blows directly onto duck.
Fry duck: Heat 2‚ inches oil in large wok or large pot until a deep-fat thermometer registers 375°F. Meanwhile, brush outside of duck with soy sauce, then dust with flour, gently knocking off excess.
Dip mesh spoons in hot oil (to keep duck from sticking) before using them to gently lower duck into hot oil. Fry duck, spooning hot oil over top, 2 minutes. Carefully turn duck over and fry 1 minute more. With extreme care, remove duck from oil with mesh spoons, draining cavity, and transfer to paper towels to drain.
3Heat oil to 400°F and fry duck a second time, in same manner, until dark brown and crisp, 30 seconds to 1 minute on each side. Again with extreme care, remove duck from oil with mesh spoons, draining cavity, and transfer to paper towels to drain briefly.
Presentation: Serve duck with small dishes of reserved spiced salt for dipping.
Makes 4 servings

Gee whiz, everybody else got theirs, but not me! I did get the coconut oil book from Amazon though...eagerly wating for my coconut oil to arrive! I think my first "recipe" will be "tropical french toast" (french toast fried in coconut oil with pure fruit apricot preserves and bananas on top)...sure hope it comes tomorrow!
