It's been a few years, but I believe it was coffee, Kalua, ice cream, brandy or tequila, and a sprinkling of ground cinnamon. It's fixed at your table, and I belive the ice cream, coffee, and kalua are put in a cofee cup first. Then brandy(I was told you could use either tequila or brandy as long as it would burn well) was poured into one of two creamers and ignited, then the flaming liquid was cascaded from one creamer to another and into the cofee. The server would the then sprinkle some cinnamon over the flaming concotion which causes it to sparkle.
It tastes good, but the big thing about it is the production made while preparing it. I have never had it in Belize, but it was served in both Playa Del Carmen and Cozumel.
