Being a naive Brit I thought that fried jacks were ..... jacks, fried. Jacks being a type of small fish. Ask for fried jacks in Britain and that's what you'll get. Another example of two countries divided by a common language!
OK,,,, I've just read that recipe ~~ a POUND of flour? I think that would be a bit much for Mr Malibu and I. Anybody else have a recipe that calls for cups of flour?
Well that would be the obvious thing to do however I was hoping (and I guess I should have stated so) for someone who actually makes them in their kitchen, home or restaurant, to give me their recipe.
according to my granny prevaricator, whom was exiled from the isle of wight in the late 1800's, a typical pound cake would weigh around 4 pounds, given there was a pound each of sugar, butter, flour and eggs.

And now for something completely different: Perhaps you could give E a "referral" for a college student from the "North West London College for Elderly People"
What I want is the recipe for those great cookie/scone thingies that Daniel serves on his Lamanai trip. I think he called them "putter bone", but I must have misunderstood or am spelling it wrong because I can't come up with anything on google. Anyone? I could pack on a few pounds with that recipe, I'm sure.

a pound of flour is only 2 cups of flour. It would be hard to make them with less than this since it is simply fried flour/bread. You could cut the receipe in half though and use 1 cup.
KC, they are called powder bun and are delicious They vary a bit depending on who's they are but all of them I have had are delicious! I especially like the fresh ones delivered to Richie's and at the local mart kiddy corner from Papi's, I think it's Armandos.
refer to seperate post for all of those interested in any Belizean receipes. The fry jacks led to the Powder bun, which then leads to others. There was another post a few weeks ago too asking for a receipe.
