Years ago when the Queen visited, she was served gibnut. The British press that accompanied her tried to create a scandal by ranting that "The bloody Belizeans have fed our queen a rat!" Every since that time the gibnut has been known as "the Royal Rat" Properly prepared, the gibnut or paca is delicious! They don't seem that rare or hard to find. Often offered on sale at the Belize City open market. There is an effort in Guatemala to teach villagers to raise free-range pacas in the village as a food and income source.

At grandmas house fried squirrel was Monday lunch, Bambi roast once a month, possum periodically, takes a lot of time skimming all the fat off. Coon, when ever possible. But that was life in the rural South. Fond memories. Oh ya, Thumper was a Sunday or festival meal in Germany as a kid. I still enjoy the WILD Life. Munching to a different drummer I guess. Jungle chicken aint bad either. But on Caye Caulker it's Lobster, conch, IN SEASON, and great rice'n'beans. Cheers, Dan
