I usually throw a chicken (feathers off), some beans, and rice into a pot of boiling (water must be hot inorder to cook) water. Its ready a half hour after you become starved to death. Serve with ketchup and an apology. Good Luck.

MamaLiz, when you get to the island, go to Rasta Pasta, have a nice meal, and buy their stewed chicken, beans and rice seasoning and pack it in your bag. When you get home follow the recipe over, and over, and over.....they have great stuff!

It is the "ricado" spice that makes it! You can buy it in Belize and Mexico.
In San Pedro it is available at Rock's.
