I am a VH Bride -- in fact I was such a Bridezilla that I almost sent Javier over the edge. I too was on a budget (we paid for the wedding, rehearsal, and one other meal) for our 50 guests. If you and your bride would like to visit over the phone I will be glad to do that (I live in Tyler, Texas now). There were a number of things we did to keep our budget in line, that I will be glad to share.
I have since planned a number of events (mostly beach bbqs) down since the wedding too. Capricorn is a special events place for us too. We did a beach bbq for the reheasal, and did a caribean buffet at Elvi's the night they had Will & Group playing. Another thing we did -- that goes down as the best -- was instead of a "bridesmaid" luncheon we arranged for a fishing trip/with bbq and snorkel. Everyone said hands down that was the best. I can also help with suggestions on things for the wedding group to do.
We renewed our vows at VH on our 5th anniversary (with 10 people there)-- so I am probably one of the few that have actually planned two ceremonies down there.
I have to say you are giving your bride an amazing gift and memory by chosing VH for your wedding. Not only are the grounds beautiful, the staff will attend to every detail. We developed such a friendship with them that we return every year (and have been for the last 8 years). I hope you have as amazing an experience.

P.S. I know you can bring beer in to your rooms -- we do that regularly -- but I am not so sure about at "events." My best piece of advice is work through Javier (or other staff). If you want to visit -- Javier (or Donald in Houston) have both my email and my cell phone number.
