Just wondering about the eggs at the island supermarkets. In the states there always fridgerated in San Pedro there not. Any problems?...Josh

Noproblems! In fact the eggs here have a much better flavor than US eggs... to me anyway.
I used to operate a fishing yacht out of San Diego where the eggs were brought on board and left unrefrigerated for 2-3 weeks with no ill effects noticed.

Belizeans tend not to refridgerate stuff as much as Americans. From my own experience growing up on a farm, we'd leave eggs out for days without ill effects -- after all, that's what the hens did.

I haven't checked this out everywhere, but I'm told, and from what I've seen this is the case, that you'll only find brown eggs in Belize. If you see a white egg, it's an illegally imported non-Belizean egg!

eggs I've been raising chickens for years the therory I've come up with is the eggs in the US are washed the natural protective coating is washed off ...so bacteria can grow if eggs are not washed they can stay at room temp 70 or so for a least 25 days

The eggs in San Pedro were absolutely delicious!!!!! Much richer and flavorful than what we get. The yolks are darker, and make ours look sickly and anemic or something. We cooked in every morining, and I also recommend the sausage links! They were the best I've ever had. I wouldn't worry. If you are concerned, crack the egg into a bowl first before you put it in a pan. If the yolk is slightly discolored or streaked or even a bit puckered, it's an older egg. Toss it. I never found one like that though, but I do here all the time.

We raise chickens and danwon is correct about the natural barrier protecting the egg. Fresh is the key word with eggs. Even a washed fresh egg will be good for a couple days at room temperature. In the states your eggs can be weeks old, like Debbie noticed, pale flat flavorless yolks means old eggs. Round deep yellow tasty yolks are fresh!

Got some chicks in the yard, but they are the kids pets. Ocassionaly we get a fresh egg from "Meg". Meg's man, "Hercules" was eaten a few days ago by the neighbors dog. Kinda bummed the girls for a while. Most of the eggs around are mass produced in Spanish Lookout (Menonite Community). The real "local" egg comes from small farms that let there chickens roam for delicious bugs etc.
The yolk on these are bright orange and are the most flavorful. Making me hungry right now!!!

I've always known our eggs here were NOT very fresh. You just don't realize it until you go somewhere that has fresh eggs. Italy is the same way. Their eggs are so much fresher and tastier than in the US. Shame on us for not getting a handle on this.

yup, when we lived in the woods refrigeration was a premuim, and eggs didn't make the cut. they are good for weeks... and weeks.. and weeks
