Hey, My husband, Mark, is a Coon Ass. Born and raised in New Orleans. Typical frenchie. Loves dem oysters. I'm french as well, but not cooney. Can make a MEAN gumbo, jambalaya and red beans and rice though!!! Trying to perfect my crawfish etoufee and crawfish pie. Any good home receipes????? Got the roux down pat

Debbie: I was amazed to find that this area southeast of Houston on Galveston Bay is like little Louisianna... coon-asses, etoufee, gumbo, jambalaya, lots of shrimp and crawdads, etc. GOOD FOOD!!!
