Needless to say that's all I had to tell Belikin Jimmy to get him to try some - he loved it. I know it had leg or knee bones, potatoes and okra in it.

Our Belizean friend is cooking it for us this weekend. I will try to steal her recipe for you. I love it once you get past the fact is is made from cows hooves.

The woman that was selling it told me how she cleaned everything really good before it went in the soup. I don't know if I can find any foots at the local HEB!

I got our cowfoot this week right from the field where it was slaughtered, talk about fresh. Our friend cleans and scrubs them and chops them herself. You can buy it here in any meat shop all cleaned and sliced but it is close to 7 Bze a pound. But like pigtail, I do not think many US shops carry it.

What is the texture like? ..something like tongue?

Have you ever eaten pickled pigs feet? Very similar. There is lots of bone and cartilage and skin, but it makes a great soup!
