Another easy one, but oh so good! Sometimes it's difficult to thoroughly cook pork and not dry it out, so here is the solution:

This work great for those beautiful center cut chops about 1 �" thick, but should work on thinner, just cut the time down.

Pre heat oven to 400 degrees
Complete coat the chops (top, bottom & sides) with MAYONISE (not fat free please)
Sprinkle on any seasoning of choice
Bake 40 minutes

That's it - Just remember 400 for 40 and you will not have to look up the recipe again.

Tropical Pork Chops

1/2 of a med. sized Papaya
l/2 cup sugar
1/2 cup water
1/2 teaspoon salt
Juice of 2 limes

SAUCE
Cut papaya into cubes
Place all ingredients in blender
Blend until smooth.

Bring to a boil and simmer for about 15 minutes.
This sauce can be kept in the refrigerator for a long time.

MEAT
Using a heavy pan arrange pork chops in one layer and put a dollop of sauce on each one. Cover with lid and cook on medium heat for at least � hour. Reduce heat to lowest setting and turn chops over and simmer while the rest of the meal cooks. Chops will not dry out, will create their own juice to keep from sticking to bottom of pan and will be so tender they will melt in your mouth.

Serve with white rice and broccoli or cauliflower

They are delish! The papaya is a meat tenderizer. Use this sauce on any meat that may be on the tough side. I haven't tried it on the Belize Beef yet but should work.

Sounds great and I will try it, if I can find a papaya in the mountains of Arizona! Bet I can, just never looked.
