We are going in late July and can't wait!

I was hoping to have done more research by now, but have been incredibly busy at work (imagine that!).

We are staying in northern AC for a week and hoping to make it over to the mainland once to check out the ruins.

Any tips, especially on cheap-eats, are greatly appreciated!

Access to cheap places will be limited to how far North you are staying. Where are you staying? You will get lots of advice. Have a great trip.
I'll be there July 23-29, but staying close to Town.

On the mainland the Smokey Mermaid was always good eats. Accross from Radison Fort George. Also with rooms to rent as I recall.
http://www.caracol.org/index.php This is the Caracol Maya site and I think the best in Belize. Over night in San Ignacio then a
1:45 minute drive to the site. The toughest to get to in Belize, but the best.

Internal travel is a big part of the Belize experience, and can also be a significant cost.

Consider which mainland adventures you would like to enjoy, and perhaps put them at the start of finish of your trip?

What time do you land and then eventually leave Belize?

What time zone are you arriving from?

Can you do a trip the day you arrive and then stay in Corozal for instance, and take the Thunderbolt across the next morning?

How many in your party...if its 4 or more, perhaps an operator will pick you up at Goldson and drop you at a hotel later?

Hotels will be 50-60% the price of a similar San Pedro lodging, and you'll save on flights

The more info you give, the better the answers are likely to be smile

Pug is right as usual, and a week is not enough time to do much of anything but get your feet wet.

You can squeeze in a great all-day trip from san pedro - round trip from island to mainland and back by dinner time. I'm thinking of cave tubing and lunch at jaguar paw plus Belize zoo, or boat ride to the river and into Lamanai temple ruins with lunch provided. Check with your hotel to hook up with local San Pedro tour guide companies like Seaduced. Have a great trip!!!

We arrive and depart around noon.

We could do this, but figured it might be cutting it close as far as time/sunset goes. Considering its our first time in Belize we figure it'll take a bit to get adjusted to travel.

ETA:
The two day trips we are thinking of doing are Caye Caulker and Lamanai ruins. We figure we'll spend the rest of the time exploring AC.

That is all the time you will have cause the rest will be seeing what you can on AC.

Amen Simon, Lamanai by Air is the way to go.
Kate and I just did that after having done it by boat from the island and its night and day.
