Does anyone know of any motor yachts that can be hired to go to the outer atolls for 4-5 nights?

If you're looking for a non sail/catamaran option, you might want to try Villa Manati in Chetumal. They have some VERY nice boats they bring to Belize for clients. I'm sure you could arrange w/ them a trip to the atolls. We had the chance to spend the day on one of their Sunseekers, beautiful boat.
