I am traveling to ambergris for our second time and we are staying on the north side in the villa de plata, we stayed south last time. Would it be best to rent golf carts to get around. I have heard water taxi's are kinda hit or miss.?
Also info on the to do's or dont's north?

I would suggest a cart. The north is really developing nicely with fun beach lounges, great restaurants, a casino and beautiful resorts to bar hop!

Breakfast and lunch at Ak Bol Retreat should not be missed. Very friendly people/owners with a small bar right on the beach. You will pass it on your way to and from town (it is south of you near the Palapa Bar). Lazy Croc BBQ on the weekends is yummy too (on the "road" - look for signs).
If it rains really hard before you arrive, I'd check the condition of the road before renting a golf cart.
