While in paradise, try traditional Belizean dishes with your very own private Belizean chef! Services includes grocery shopping, cooking, table set up and clean up! Pricing varies based on number in party and variety of food choices therefore negotiated upon inquiry. You may watch and learn or simply lay back and smell the tropical aromas that circulates the air!
This menu provides a few tasty dishes but keep in mind anything specific is possible!
MENU
APPETIZERS
STUFFED JALAPENOS
Stuffed with cream cheese, minced chicken and fresh herbs then deep fried until golden brown in beer batter! Served with creamy dill dip!
GUACAMOLE DIP
Avocados mixed with fresh onions, tomatoes, finely chopped cilantro with a squeeze of fresh lime juice served
with crispy tortilla chips!
SEAFOOD DIP
Mixture of available seafood mixed with creamy sauce, fresh diced onions, celery, peppers, tomatoes laid on a bed of lettuce, served with crispy tortilla chips!
CONCH/LOBSTER FRITTERS(SEASONAL)
Battered until tender, mixed with finely chopped onions, carrots, green peppers, cilantro then fried in seasoned flour batter until golden brown served with sweet and spicy sauce!
CHICKEN WINGS
Deep fried wings in beer batter, richly seasoned with all Belizean spices smothered in spicy butter sauce alongside fresh carrots and celery!
CEVICHE
Fresh thinly sliced tomatoes, onions, cilantro with choice of conch, lobster (seasonal) or fish marinated in fresh lime juice served with crispy tortilla chips![/color]
SOUPS
Relleno
A popular Mestizo traditional soup made with whole chicken stuffed with pork and eggs boiled in black recado (paste of local spices) broth with ground veggies served with fresh corn tortillas or coconut rice!
Escabeche “The onion Soup”
Delicious lime based broth enriched with onion rings, carrots and jalapenos topped with richly seasoned fried chicken served with fresh corn tortillas or coconut rice!
SERE “Traditional “Garifuna Dish”
Thick and creamy broth made with fresh coconut milk boiled in ground veggies topped with crispy fried fish served with coconut rice!
CHILEMOLE “THE BLACK SOUP”
Chicken cutlets boiled in medium spiced black recado broth along with a variety of fresh ground vegetables topped with a boiled egg, served with coconut rice or fresh corn tortillas!
CRAB SOUP
Fresh crab meat simmered in fresh coconut milk, dice sized potatoes, carrots, celery, onions, sweet peppers and garnished with finely chopped fresh cilantro!
SALADS
CHEF MAR’S HOUSE SALAD
Fresh romaine lettuce, tomato wedges, red onions, cilantro, shredded carrots, diced cucumbers, crumbles of feta cheese tossed in fresh lime and orange juice!
CLASSIC SALAD
Fresh lettuce, shredded carrots, onions, green peppers, black olives, pickles served with blue cheese/ranch/Italian dressing!
CAESAR SALAD
Fresh romaine lettuce, carrots, onions, black olives, green peppers topped with grill chicken strips served with Caesar dressing!
CARIBBEAN FRUIT SALAD
Diced sized ripe papayas, ripe mangos, onions, black beans, freshly chopped onions, cilantro tossed in freshly squeezed lime & orange juice with a pinch of red pepper flakes place on a bed of fresh lettuce, garnished with fried plantain chips!
PIRATE’S SALAD
Romaine & iceberg lettuce, tomatoes, red onions, cucumbers, mushrooms, sharp cheese, blackened fish chunks tossed in red balsamic vinaigrette!

‘LOBTSA’ DISHES!
Freshly caught lobster done your choice of style! Curried , garlic buttered, lemon buttered done either pan seared or baked served with sautéed veggies(zucchinis, carrots, pumpkins, onions, fresh basil) and homemade coconut rice!
AMBAR’S FAVE! PORK CHOPS!
One & a half inch thick pork chops seared then topped with chef Mar’s special sweet soy and onion ring sauce served with wild rice and limey green cucumber, lettuce, onion, tomato & Feta cheese salad!
SHRIMP/CHICKEN/LOBSTER ON A STICK
Choice of meat or combo on kebob sticks layered with red/green peppers, tomatoes, apples, red onions, tomatoes, grilled/baked then fully coated in a beer barbequed sauce served with whole baked potatoes and homemade baked beans!
RANCHITO’S ENCHILADAS
Fresh tomatoes, onion, green peppers & cilantro stewed then placed over hot corn tortillas with diced boiled eggs; tortillas then rolled with another layer of tomato sauce on top & melted local cheese!
