Conch Fritters from Ambergris Caye, Belize

After participating in the recent Twitter #TNI (Traveler’s Night In) about the Bahamas, I was surprised to learn how many people had never tried conch before! Conch is one of my favorite things to eat when visiting Belize and other Caribbean destinations.

If you do not know what conch is, I guarantee you probably recognize it’s shell. The beautiful shells are often sold at nearly every souvenir shop by the beach in coastal towns in the United States. The delicious “snail”, cooked and served in a variety of ways, is known as one of the best aphrodisiacs around. Some of the most common ways conch is served is as an appetizer (conch fritters), part of ceviche (which is one of my favorites), and even as a main entree – blackened or sauteed in garlic and white wine are awesome!

This week’s photo is from our recent annual getaway to Belize where the conch fritters and ceviche are among the best I’ve ever had!

Both of our girls are working at El Divino during their 3 week school holidays. Christine is on day shifts and Rosie at night.

El Divino ceviche is still amazing. Well worth a stop to enjoy their signature dishes.
