Seeshell your spot on ,I also like fingers better than fritters if done right.they take the Conch cut it into strips ,Beat it till soft.then coat it with flour ,and spices then deep fried .Try both .
I like Carumba's fingers as well and elvi's are very good also.
both need a cold beer or two to wash down this ocean treat .
