I love French fries, but could never get them to be crispy. These fried potato wedges are awesome because they are crunchy and crispy, but still thick enough to satisfy.

After years of battling to get crispy fries from Belizean potatoes I saw a recipe for cooking them putting the raw cut potatoes into cold oil (yes cold!), then turn on the heat and let them cook until golden brown. It goes against everything I thought I knew about frying but IT WORKS! - fluffy inside, crispy outside, and when I drained the oil back into the bottle hardly any had been used.
