Mark,
arrive san pedro very early in the a.m.
mix well,
find most any beachfront restaurant,
view beautiful sunrise,
add strong coffee,
great wait staff,
order fry jacks!

Estel's opens at 6:00 right on the beach.Nothing like an order of fryjacks with the Marie Sharps Jam they serve with it if you like. Your feet are in the sand at Estel's and it a great place to watch the Island wake up.

Ya I tried the Estelle's ticket when I was there last week.....really good stuff. Unfortunately this computer has me on a short leash..... Really though if anyone could offer up a recipe I would appreciate it!

A recipe for Fryjacks is posted on the Caye Caulker message board. Check it out and if you make some can I come and enjoy them w/you ~ I have Marie Sharp's Jam! lol

Dan and I both LOVE the fry jacks and would love the recipe also. BUT if they aren't as good here its just one more reason to hurry back. WE ARE AC-OHOLICS!!!!!!!
