I would really like to see Tikal but making the trip in a day seems rather ambitious in addition to potential crime along the way.

I also thought about taking the boat to Corazal City and then bus up to Chetumal for the day. Anyone with an opinion on this option? Thanks.

Tikal will be lots easier to plan than Chet and much much more interesting. Chet has a maya musuem with lots of replicas, which is fine if you'll never be able to get to the real thing. Both Maya and Tropic offer Tikal packages with air, tranfers, guides, etc. Or see Lamanai from San Pedro. Or Altun Ha. Any of these have to be a better plan than a vacation dayin Chet.

Katie, I would much rather see Tikal but since flying is not my favorite activity and a day trip by land is not an option I will have to see Tikal at a future date, hopefully where I can stay there. So regarding Chetumal, according to my Frommers book, I should be able to take the Thunderbolt to Corozal Town and either get to Chetumal by 1 hour busride or 10 minute boat ride. Anybody have insight on this plan?

If you want to see ruins, there are others that you can get to by boat from SP. Altun Ha & Lamanai make nice day trips.
