Caves Branch Jungle and Adventure Lodge in Belize, Central America, is offering a pair of cheese making courses over the latter half of the month of January. These courses are designed for the home cheese maker and for anyone considering small-scale commercial cheese production. The mantra of Caves Branch is that with basic kitchen equipment and as little as four ingredients, students will be able to make hundreds of exquisite cheese types. In order to participate, interested travelers may purchase one of their Cheese Making Adventure Packages. The packages include a 5-night stay at the lodge, meals, a day's worth of tours, 3 days of cheese making instruction and full access to the facilities around the resort, including the pools, hot tub, and botanical gardens.

Travelers may choose from either of the two courses, depending on their interests:

Cheeses of Italy (January 17th - 22nd, 2013)

This course explores classic Italian cheeses and how to make them. Italy has been a center of cheese production for well over 4,000 years, and some of the world's best known and loved cheeses hail from the Italian Peninsula, Sicily, and Sardinia.

Cheeses from Around the World (January 24th - 29th, 2013)

This course delves into cheese types from around the world, including some fascinating Latin American cheeses. Latin American cheeses are little known in North America, but demand for these cheeses is on the rise due to expanded interest in the cuisine of this region.

Interested travelers can visit their dedicated cheesemaking site for more information on the upcoming cheese making courses and how to book one of their packages. However, there are other cheese making courses to anticipate in the coming months for those unable to make it for either of these two events,

About Caves Branch Jungle Lodge: Ian Anderson's Cave Branch Adventure Company and Jungle Lodge is located on a sprawling 50,000 acres of privately owned land. It started out in 1995 with just two rooms, an outhouse, and no water or electricity. It now specializes in adventures within the Mayan world that are geared towards a more diverse group of travelers, such as those who want to experience birding, eco tours, cave tours and horseback riding. The development over the years includes a restaurant, botanical gardens, swimming pool, and a small-scale cheese making facility. Ian Anderson and his cheesemakers will be in Placencia on Friday 15 Feb introducing a bunch of new cheeses at the inauguration of the new Mathieu's (ex- San Pedro) bakery and Deli, from around 4pm. The event will be a Complimentary cheese & wine tasting featuring specialty artisan breads from Mathieu's, deli meats and cheeses, Ian Anderson's cheeses, and a selection of wines paired with the above. Looking forward to meeting you in Placencia - Mathieu's is situated on the marina opposite Robert's Grove around 4 miles north of the village, a mile south of Seine Bight.

Second Cheese Making Class a Success

They had another cheese making workshop at Ian Anderson's Caves Branch, and it was fun and informative for all. Belize now has some great cheese to choose from.

"In September, 2011, I travelled to Warren, Vermont (pop. 302) and took a two week cheese making course offered by Dr. Larry and Linda Faillace of Three Shepherds Farm. 16 months later, our cheeses are being recognized by International cheese makers and holding our second International Cheese Making Workshop.. and its only getting better from here."

The "Secret" Cheese-Making Industry in Belize

With pristine Caribbean beaches and dense tropical jungle, the Central American country of Belize offers visitors the best of both worlds.

It has become a popular destination for adventure-seeking travelers, wildlife lovers, history buffs and R&R takers alike. But one thing it has not been known for, largely due to its location in the tropics, is its dairy industry.

Until now, that is.

Three years ago, an entrepreneurial local lodge owner become one of the only artisanal cheese makers in the country. Today, after honing its craft, Caves Branch Adventure Company and Jungle Lodge produces 12 varieties of cheese from a small batch factory on its property. The Cheese is used to feed its own guests and sold to other hotels in Belize.

But more exciting, they offer cheese-making classes to their guests.

I talked with Ian Anderson, Caves Branch proprietor, about his journey to becoming a cheese maker, how the property's jungle-made varieties are gaining international popularity and how you, too, can make cheese in Belize.

So, what initially inspires a jungle lodge owner to start making cheese? Heartwarmingly enough, Ian and his wife, Ella, initially got the idea after a philanthropic project they had established to help local at-risk children and seniors.

"It all started through another program that my wife established nine years ago called the Belize national youth chess foundation," Ian Anderson said. "We invited elementary school-aged children and encouraged them through the chess clubs."

To help these children further, Ian and Ella decided to set up a petting zoo on their property, where the children could spend time with the animals.

But as Ian explains, nature took its course and the animals began having babies.

"We ended up with a lot of goats," he joked.

"One day I realized we need to find something to do with the milk, so I said to myself, 'I'm going to teach myself how to make cheese.' And that is how simple it was."
