Well,

I am hosting LaurieMar this evening - she enjoyed her Belizian Jerk Chicken I prepared for her from the the mix I purhased from Lagniappe back in August. Absolutely delicious! It was labor intensive but well worth the effort.

Hey Capn and GV - I am working on my return trip for next year. It will be summer time.

Laurie and I are preparing for a different Central America trip on thansgiving day. We shall have some interesting stories to report when we return laugh

You two have fun on your trip - can't wait to hear of your adventures. Tell Laurie my friend in Panama is meeting me in Belize so she won't be there. Was hoping to hook you all up so she could show you around but I am sure you two will make lots of new friends.

What a meal it was! I highly recommend buying that jerk seasoning. I think I am a pretty accomplished chef, but Gela outdid herself. Excellent jerk sauce. As soon as I walked in her door, I was handed a Belikin (or 2 or 3). For desert, it was on to the One Barrel rum. Bon apetit!

I bought my Jerk mix at the Island Supermarket.

You can also purchase the mix at the airport.

Govikes: I'd love to get my butt back down there, but this vaction, I am heading to parts unknown (at least to me). Watch out, Costa Rica and Bocas Town, Panama! Be back to Belize next summer - have to at least get my once a year fix!
