Friday's Drink:

Key Lime Pie Martini

2 oz vanilla vodka
1 oz Roses Lime Juice
1 oz half & half

Dip rim of chilled martini glass into graham cracker crumbs. Pour all three ingredients into a cocktail shaker half-filled with ice cubes. Shake well, and strain into chilled glass. Garnish with a twist of lime, and serve.

SWALLOW!

and to soak up all that booze!

Black Bean Taco Salad with Lime Vinaigrette

Vinaigrette
� cup tomatoes, chopped and seeded
� cup fresh cilantro, chopped
2 tablespoons olive oil
1 tablespoon cider vinegar
1 teaspoon lime rind, grated
1 tablespoon Nellie & Joe's Key West Lime Juice
� teaspoon salt
� teaspoon ground cumin
� teaspoon chili powder
� teaspoon black pepper
1 garlic clove, peeled

Salad
8 cups iceberg lettuce, thinly sliced
1� cups chicken breast, chopped and cooked
1 cup tomato, chopped
1 cup green pepper, chopped
1 cup red onion, finely diced
� cup reduced-fat sharp cheddar cheese, shredded
1-15 oz. can black beans, rinsed and drained
4 cups tortilla chips

To prepare vinaigrette:
Combine all vinaigrette ingredients in blender. Blend until smooth.


To prepare salad:
Combine all salad ingredients, except chips, in a large bowl. Add vinaigrette and toss well to coat. Served with chips.

This FRIDAY'S drink:

A frozen treat to beat the summer heat:

FROZEN MOJITO

1 (6 ounce) can frozen limeade concentrate
8 (1.5 fluid ounce) jiggers rum
1/2 cup fresh mint leaves
1 tray ice cubes

Place the lime juice concentrate, rum, mint, and ice cubes into the container of a blender. Cover and pulse briefly to get started, then process until smooth. Pour into 4 cocktail glasses.


OK NOW, AFTER TWO OR THREE, TRY TALKING LIKE AL PACINO IN SCARFACE.

there is another drink similar to the mojito that does not have mint. it may also have sugar crushed with a lime in the bottom of the glass.
do you or anyone else remember that recipe?

Caipirinha made with Brazilian cachaca.

2 tsp granulated sugar
8 limes wedges
2 1/2 oz cachaca


Muddle the sugar into the lime wedges in an old-fashioned glass. Fill the glass with ice cubes. Pour the cachaca into the glass. Stir well.

but what is cachaca? this drink that i had was made with rum & lime juice.
this is making me thirsty!

Cachaca is actually Brazilian rum with a high, high alcohol content. You can buy it in the States at some liquor stores. I got mine from Brazil and one is a real thirst quencher

Slight breeze, bright blue sky, crystal clear water and ice cold chelas.

My choice for this fine Friday:

Dirty Banana

1 oz creme de bananes
1 oz creme de cacao
1 oz Kahlua® coffee liqueur
2 scoops vanilla ice cream

Blend six ice cubes with ice-cream in a blender until smooth. Add liqueurs and continue blending, again until smooth. Add more ice-cream if needed (for milk-shake consistency). Pour into a highball glass, and serve.

Sounds like a girl drink...

Hey Chloe - thanks for the info -never heard of this stuff but I'm gonna see if I can find the mix. I've got the marie sharps,lime, salt & Belikin at my house, but I couldn't remember what else goes in there

Micheladas!

Fill your favorite frosted mug with ice (salted rim).

Squeeeze an entire lime in there.

Add (amount depends on how you like it) Season All, Lea & Perrins, Maire Sharps, Black Pepper (a few dashes each). Some like a lil' soy sauce too.

Pour in your favorite beer (lighter beers work better for me).

Good with octopus ceviche from Barrel Bar!
