Colleen’s Pate

Ingredients

1 lb. chicken livers
1/2 red onion
4 tablespoons butter
2 1/2 cups (1/2 lb.) mushrooms
14-20 basil leaves
1 teaspoon curry powder
1 teaspoon paprika
1 teaspoon each, salt and pepper
1/4 teaspoon turmeric
2 tablespoons cognac

Preparation

  • Slice mushrooms and onions into small pieces
  • De-nerve chicken livers (cut out the thin white colored vein between the left and right sides of the liver using a paring knife)
  • Sauté the above with 2 teaspoons butter and spices until livers are cooked, about 10 minutes
  • Add cognac and allow mixture to cool
  • Place in blender with basil leaves, add remaining butter and blend until smooth
  • Pour into a loaf pan lined with foil
  • Cool and refrigerate 3-4 hours
