TERESE'S HOME COOKING When your holiday calls for delicious home-cooked Garifuna food, you can arrange to eat with me at my home. Call me or ask your hotel to call to make arrangements. If you don't like to eat gibnut, armadillo or iguana, I can make a fish, chicken, conch or vegetarian dish for you. All of our food is fresh and natural, taken from the bush, the sea or our farm.
Your hostess and cook is Terese Castillo.

Years ago when the Queen visited, she was served gibnut. The British press that accompanied her tried to create a scandal by ranting that "The bloody Belizeans have fed our queen a rat!" Every since that time the gibnut has been known as "the Royal Rat"
Properly prepared, the gibnut or paca is delicious!
They don't seem that rare or hard to find. Often offered on sale at the Belize City open market.
There is an effort in Guatemala to teach villagers to raise free-range pacas in the village as a food and income source.
