I'll bring the squash casserole. YUM I love that!@!! Hey there law....we had a tamale making party about 3 weeks ago..made 55 dozen. Very fun time indeed. They were beef and pork mixed together. Cooked and shredded the meat the night before. The next day added cumin, dried red chilies (?) cooked in water to soften then ground in a blender, lots of lard, garlic. I think that was it. And of course you have to make the masa, they put salt and some of the same red chili in there. They were delicious!!!

Malibu - sounds like you had the basics there - don't forget the baking powder and soda in the masa to make 'em puff up! I'd say you're well on your way to being an honorary Mexican! Merry merry and happy feasting!
