Since change from US$'s and travelers checks will be in BZ$'s, am I correct in assuming I will be able to change BZ$'s back to US$'s at the bank prior to leaving CC?

Don't assume that you will be able to do that, there was a recent moratorium on changing Bz dollars back into U.S., and even if you can, the bank rate is close to a 10% surcharge. You get the best exchange rates at the border. Every business here accepts U.S. dollars, and if you bring small denominations, you probably wont have to deal with large amounts of Bz dollars. Bring lots of 1s, 5s and 10s. $100 bills are sometimes difficult for retailers to make change for, and most of the time they don't hve a surplus of U.S. cash to hand back.

What about exchange at the airport?

Sorry I didn't get back to you earlier on this. Don't count on changing back to U.S. even at the airport, there is no "official" moneychanger that I know of and the only bank is Atlantic Bank, who seems only interested in collecting U.S. dollars, not giving them back. So I still recommend bringing U.S. in small denominations and traveler's checks. No one in their right mind will refuse U.S. dollars, you might get small amounts of Belize change back, but that can be avoided if you bring lots of 1s, 5s, 10s & 20s.
