3 great inns. HVI and BL are in the Mtn Pine Ridge. BL has great cabanas (and two bdrm villas), varied menu, great thai massage. Swimming in the creek and hot pool.HVI is on a unique 7200 acre property with hardwood stands, 7 private waterfalls, 90 miles of trails, dramatic views, cottages with fireplaces, pool and hot tub. CC is in tropical foliage on the Macal River, orchard villa and two bdrm spa villa fine for 4 pax, spa, butterfly farm and natural history centre on premises. All 3 are great choices, but different from each other.

Like Katie says, all are great in their own ways. Are you looking for any special amenities or activities? That may help narrow it down. Blancaneaux sells out very far in advance so availability may be a factor in your decision. Price wise Blancaneaux & Chaa Creek would be the most expensive, HVI a bit less. Also, if either couple is older or has trouble getting around, the Blancaneaux property is very steep with the cabanas perched along the hill side & lots of steps, Chaa Creek is very spread out, while the HVI dining/lodging area is the most compact with paved sidewalks between cabanas.
