Anybody got ideas on where they would recommend for fifty to one hundred bucks a night? We would like a pool and a refridgerator for sure. Any suggestions? Is april or may a good time of year to go? Thanks in advance for your response.

Off-season (after Easter to about Thanksgiving, though the exact dates vary by hotel) you'll have a much bigger selection of hotels and condotels in the US$50-$100 range. Many hotels on Ambergris Caye cut their rates by 40% or so off-season, or at least offer special discounts.

Among the good places in that price range off-season, mostly toward the upper end of it, would be Coconuts, The Tides, SunBreeze, Mayan Princess, Tropica, Banana Beach, Coral Bay and Belizean Reef Suites.

Now I see that you wanted a pool and a fridge. Any of the condotels listed (Banana Beach, Mayan Princess, etc. have kitchens with fridges.) Banana Beach, Tropica and SunBreeze which I mentioned have pools. A few hotels such as The Tides have fridges in some rooms.

Hotels/condotels on Ambergris which have pools include Casa Caribe, Caye Beach Resort, Journey's End, Essene Way, Captain Morgan's, El Pesdcador, Seven Seas, Paradise Villas, Barrier Reef, SunBreeze, The Palms, Ramon's, Belize Yacht Club, Hidaway, Playador/Exotic Caye, Banyan Bay Villas, Tropica, Banana Beach, Caribe Island, Sunset Beach, and Cayo Espanto on a small island off the back side of Ambergris. May have missed one or two.

Sunbreeze has a pool, the rooms are average hotel rooms, but you can rent from Sunbreeze a small refrigerator, and coffee pot for the room. Use your email and asking them what you can rent.
