Do most of the bars, restaurants, fishing and diving charters take Amex? Thanks for your info.

Hmm, don't see why not. It's easy to get a merchant account and the rate is about the same as MC/VISA.

I have the merchant account and still say no.
User of the card can dispute for any reason and merchant has no recourse. In other words they side with the card holder 100% of the time, never even ask the merchant.

I used to have a merchant account and found I had to wait 7weeks to get any money at all, and then they charged more than double the commission of Visa/Master.

Terrible company, no-one with any sense will have anything to do with them.

My AMEX is in the bank the next day (if in by 1pm), 1 dispute ended up in my favour (the client forgot they had charged and I had the documentation to back it up.)

AMEX is the only card I carry. I've been able to use it almost any place in San Pedro that took credit cards. They do charge a higher merchant fee than Visa or MC. Elbert, don't know where you got your info, but can tell you the one and only time I filed a dispute AmEx sided with the merchant.
I like that it's a charge card not a credit card, I have no interest and no annual fee and have always found their customer service to be above average.

I can never remember which is better . . . safe? . . . or sorry?

Belize Bank is the only bank (in Belize) processing AMEX. WHen Scotia Bank was doing the processing it would take weeks to get paid, but now that BB is doing it, its only a day or two before it shows up in your account. If you are in San Pedro or on the mainland, you have the ease of a BB branch at your doorstep. (no this is not an ad for Belize Bank) Here on Caye Caulker we have no Belize Bank office so have to go to the city for any issues regarding AMEX. I have an AMEX p.o.s machine available at the store, but its not widely used. AMEX charges comprise less than 10% of our credit card sales. Very few businesses on Caye Caulker offer AMEX because of having to bank in Belize City.

Just this instant(5 min. ago now) a costumer pulled out a Amer X card and I said , 'Sorry I don't take American Express', they then pulled out the visa and I ran it. Then she remarked , 'No one down here takes American Express?'.
It might not be true that they side in a dispute with the card user but for sure the reality is 'No' we don't take it.
