While researching about naturally healthy foods here in Belize I was SHOCKED to learn that cow's foot is a plant not part of an animal. I also appreciated the post about pig’s foot. The time I was talked into cooking that I didn’t know about the multiple boils; just added the whole THINGS to the pot of peas. When they cooked they turned bright pink and stuck straight up in the air. (Looked like little boys penises.) The local guys loved them but I couldn’t bring myself to eat one. The peas were good.

I am growing chaya and would like some recipes for cooking this. I am not found of regular cooked spinach except when mixed into a dish so naturally didn’t like the chaya that way either. From what I read both Chaya and Cow’s Foot are extremely healthy and loaded with vitamins and minerals.

I really would like to eat healthier and am open to suggestions. With the abundance of great native plants that grow in Belize (but not on the cayes) I’m surprised some enterprising person has not been harvesting and running a market here.

Sorry, but every CF soup I've had(and a quick search of recipes) has REAL cow feet. Don't know what green you're into. Not alot dif from Grandma Schultz's innard/hoof/ear/head. Boil it baby, and it'll be good. Then again gibnut could be a cashew.

Right, we use real animal cowfoot for soup (and used alot in French cooking for its gelatinous quality. We have a plant called cow itch, which itches. Do not use that for cooking. Chaya is wonderful, but also toxic and has to be boiled once, removed from the water and boiled again.
