Is there any local milk/cream available on the island besides the imported stuff you get at the stores?

Western Dairies is the milk producer for Belize. I have had issues finding their milk spoiled before the expiration date (use to run an espresso bar). I have switched to boxed milk (LaLa Light) and use the EHT cream that is imported. A small compromise to live here.

Not sure if this will be helpful to you - Marina's carries the freshest Western Dairy milk. Heard they freeze it before shipping to help with normal shelf life.

We still buy boxed milk for coffee been burned to many times. I switched to coconut water on my cereal and it is amazingly good on my homemade granola.

Half the time I was buying it, it was funky. So I've switched to boxed soy. A bit more expensive but getting cheaper.

For the real fresh stuff...just try to get the small containers (in case it's bad) and get an early expiration date!

We just had a delivery direct from the mainland by a new supplier we're trying out. He brought us free range eggs, and pasteurised (but not homogenized) full cream milk. The eggs range in color from white to pale blue to dark brown and the yolks are huge and very vivid yellow. The milk was creamy, and the cream did separate to the top like it used to do when I was a kid. We made ricotta out of the milk and Gunter made ricotta & spinach fresh pasta ravioli. We're very pleased with the produce and we know where it came from and when it was produced. Would there be a market here for us bringing in the milk to sell, or the eggs?

I could see how Milk like this would be really nice to have out here, not sure about the blue eggs, but white with big yolks are always nice as well.

Although not many people know what to do with the Full Cream milk anymore.

Currently there is 2% boxed at Super Buy, as that 1% and no percent just doest cut it for cooking. And they had almond milk, my new favorite. Regarding the eggs, it doesn't matter what color the shells are, they are all the same. I used to have a yard of free range chickens and they were pretty disgusting. Don't think, a green yard of grass, when you think free range. All the eggs are great here if you buy them where there is the greatest turn around in sales. I've given up on the local produced milk...when you see a case of it sitting out on the sidewalk on a 90 degree day, and nobody cares to put it in the cooler for hours, it will change your mind too.

The Western Dairies milk that is commonly available is not only frequently on the point of turning, it also to my palate has an unpleasant taste even when fresh. Many people share the same view. I now never use anything other than Lala Lite, though I'll be interested to taste the milk Mathieu's have obtained.

I've never been a fan of drinking milk other than in coffee, but it really was very nice. I'll let you know when we have some more in. We have a half case of the freerange eggs which we're using for the pasta and other baking as well as breakfasts, , they really are spectacular to see as well as to taste.
