Enchilades is considered a comfort food. Many different cheeses can be used to make this dish, but I use Dutch or Edam Cheese. By cooking the cheese in the sauce it allows this dish to not have to be baked in the oven. All that's necessary is to heat all ingredients before assembling the enchilades.

The Secret to Belizean Enchilades is Dutch or Edam Cheese. This sauce can be used as a party dip or topping for many of the Spanish foods eaten in Belize. Keeping a serving of this sauce in the refrigerator will do in a pinch to make a meal when funds are low and pantry is truly bare.
How to Make Belizean Enchilades
Belizean Enchilades is delicious and easy to make. All you need is corn tortillas and tomato sauce and Dutch cheese. Anything else is optional.
