are there any good woods in Belize for smoking meats and veggies? I usually use hickory or mesquite here in Dallas, but am wondering if smoked foods are good using Belizean woods.

If you are on the island, try dried coconut husks that have been soaked for a bit in water... it's what we use for a lot of stuff... works/tastes great.

We had a guy in Belize city smoke a pig for us and he told us he used a variety of mangrove wood but I could not tell you for sure. It was very good but they use a hot smoke here not a cold smoke as I was told the meat will spoil before it is done smoking.

Oak, Maple, Osange, and Zericote work well for smoking but you have to be careful as there are a number of woods that are definitely NOT suitable for smoking such as Poisonwood, so you need to be able to recognize the various species. I haven't tried Mangrove but since it's a protected species...that is, cutting live trees is regulated. Dead wood is not.

True that. I've seen it used, never tried myself. Makes excellent smoke.

I don't smoke - anything- LOL - but I do cook on a fogon and my favorite is Sea Grape. Is burns slow and hot much live oak.
