There is so much flavor in the french toast, i recommend regular syrup for on the french toast not the carmelized banana syrup.
the banana syrup is super good, so use it for pancake or waffles ....
3 whole Eggs
1/4 cups Half-and-half (or milk)
1 teaspoon Vanilla Extract
1/2 teaspoons Ground Cinnamon
1/3 cups Sugar
4 slices Whole Wheat Bread (or Any Bread, preferable THICK)
1 cup corn flake crumbs (or Panko Breadcrumbs)
1/2 cup sliced Almonds; chopped
1 stick Salted Butter, Melted
Softened Butter And Maple (or Pancake) Syrup, For Serving
In a pie pan, whisk together the eggs, half-and-half, half the sugar, and half the cinnamon. Set aside.
In a separate pie pan, stir together the almonds and breadcrumbs with the rest of the sugar and cinnamon. Use a fork to stir in 2 tablespoons of the butter so that the crumbs are slightly moist. Set aside.
In a large nonstick skillet, heat the rest of the melted butter over medium-low heat.
One by one, dunk the bread in the egg mixture (turning to coat), then lay them in the dish with the bread crumbs, turning them over and pressing them gently so that they stick and totally cover the surface.
Place them into the skillet with the butter and let them cook on the first side for 5 to 6 minutes, watching closely to make sure the crumbs don’t burn. (If they start to darken too fast, turn the heat slightly lower and watch.) Turn them over and let them cook for 3 minutes on the other side.
Transfer the pieces to individual plates, top with fresh fruit, and serve with butter and syrup. Delicious!
For a fun topping:
2 Bananas; sliced on a diagonal (1 heaping cup)
1 cup Pure Maple Syrup
1 tablespoon of Butter
zest of 1/2 Lemon (if it's a small lemon; zest the whole thing. Start with half and give it a taste first)
While the French Toast is cooking, prepare your syrup; place a medium sauté pan over medium heat and add 1 tablespoon of Butter. When the Butter has melted, add the sliced Bananas in an even layer. Cook, without moving for a minute, until the Bananas caramelize and become golden brown. Gently flip and cook for another 30 seconds on the other side then add the Maple Syrup and Lemon Zest with a pinch of Salt. Reduce the heat to low and continue to simmer until the syrup is heated through.
To serve: Slice a piece of French Toast diagonally and spoon some of the Banana syrup over the top and around.
