Sweet Potato bread


4 pounds of sweet potatoes, peeled and grated
2 cups light brown sugar (azcar crema)
10 +/- sticks of cinnamon (ground cinnamon can substitute)
1 can of coconut milk (13.5 oz)
2 tablespoons butter
1 teaspoon lime zest (optional)
1 can evaporated milk or regular milk
Grated ginger or ginger powder (to taste; add carefully)
Pinch of salt.


1. Peel and grate sweet potatoes. Boil the coconut milk, evaporated milk and cinnamon, the ginger, butter and light brown sugar (azcar crema).

2. To this mixture, first add the grated mass of sweet potatoes and then the lime zest. Move the mass around and stir so that it is not too sticky nor too dry.

3. Bake it in the oven in a pre-greased baking mold of your preference for 1 hour at 350F.

Notes: Remember that the azcar crema will give it a more rustic flavor. Milk can be regular or evaporated. Be careful with the ginger because too much ginger can make it bitter. In addition to cinnamon, you can also use ground cloves (optional).

3 lb sweet potatoes
1/4 cup butter
1 1/4 lb sugar
2 (14oz) can coconut milk
1 (14oz) can evap. milk
1 tbsp vanilla
1/4 cup raisins
2 tbsp grated ginger

1.Grate sweet potatoes.

2.Add sugar and coconut milk.

Stir until sugar dissolves, then add evap. milk, butter, vanilla and raisins.

3.Stir until properly mixed and pour into a baking pan 9 x 11 inches. Bake at 350 degrees for 45 - 60 minutes.

Sweet Potato Pone: Sweet Potato Pudding [Vegan, Grain-Free]

Sweet potato pone, which is also popularly known as the potato pound of Belize, is a traditional dessert from Belize that consists of grated sweet potato, raisins, milk, cinnamon, and ginger. The texture is very similar to bread pudding, but in this recipe, sweet potato takes the place of bread as the starch that soaks up all the wonderful flavors.

  • 6 cups grated sweet potato
  • 3/4 cup raisins
  • 1 1/2 cups cane sugar
  • 1/2 teaspoon ginger
  • 1 teaspoon cinnamon
  • 3 cups almond milk
  • 2 teaspoons vanilla
  • 2 tablespoons and 1 teaspoon of oil or vegan butter

Preheat the oven to 450F and grease a 913-inch rectangular baking dish.

In a large bowl, combine the sweet potatoes, raisin, ginger, cinnamon, sugar, and vanilla.

Add milk and oil/butter and stir well to incorporate. Pour the mixture into the dish.

Bake on the bottom rack of the oven for 30 minutes and then lower the oven to 350F. Move the dish to the top shelf and bake for an additional hour or until the top turns golden brown.

Sweet Potato Pudding an unexpected treat for the holidays!

Possibly my favorite treat, especially around the holidays, is the Sweet Potato Pudding. Ground sweet potatoes (purple skinned with starchy white flesh), freshly grated ginger, some thick, creamy coconut milk, and brown sugar to enhance the sweet potato are all mixed and placed in a pan to bake till its a gorgeous dark hue.

4-5 large sweet potatoes, finely grated
1 tbsp. freshly grated ginger
1 cup of coconut milk
Brown sugar (to taste)

Mix the ground sweet potatoes and ginger, adding splashes of coconut milk till desired consistency. Add brown sugar, mixing well till you reach desired sweetness. The mixture should not be runny. Place on a well-greased 9 round pan, and flatten till level.

Slide the pan into the 350˚F preheated oven, and bake for 45 minutes. Slide to broil the top for 5 minutes, till caramelized. Cool, then slice into delicious wedges and enjoy!
