4 Recipes for leftover Rum Popo
After the holidays, you’re likely to find yourself with a fridge full of leftovers, including Rum Popo. And while each family has its own unique recipe, the festive holiday drink’s core ingredients are sugar, eggs, condensed milk, evaporated milk, and rum. Acting as the perfect dairy base to spice up your baking and breakfast recipes, here’s a few ways to repurpose your leftover rum popo before its short shelf life in the fridge. Don’t forget the extra nutmeg! Delicious hot or cold, this latte is the best of both worlds – strong, fragrant coffee balances the sweet richness of rum popo. To make it hot, heat 2 parts rum popo and 2 parts milk to a simmer, then add 1 part extra strong coffee; sweeten to taste! To make it cold, fill a tall glass with 6-8 frozen rum popo ice cubes and pour over cold coffee to taste.

An Introduction to Caribbean Cuisine
Culinary historians credit the Caribs with spicing their meals with chili peppers, still a necessity at most tables. Arawaks are believed to have developed the barbecuing of foods by roasting on native sticks called barbacoa. Spaniards introduced coconut, chickpeas, cilantro, eggplants, onion, and garlic. Mexicans contributed papaya, avocado, chayote or choc ho and cocoa. The Europeans brought oranges, limes, mangoes, rice, and coffee. Africans shared their love for okra, plantains, callaloo, and breadfruit. It’s no wonder food, and its preparation is a primary focus at family events and festivals throughout the Caribbean. Drawing upon traditional favorites and newly discovered sensations, accomplished cooks even enjoy a certain amount of local celebrity. In addition to seafood specialties, with tropical fruits and vegetables as accents, you can find Caribbean favorites made with lamb, pork, chicken, or beef in virtually every town across Belize.

Ancient Mayan palace found near modern-day Cancun was used by the society's elite more than 1,000 years ago, archaeologists claim
Archaeologists have discovered a large Mayan palace in an ancient city that was likely used by the society's elite more than 1,000 years ago. Excavations at the site of the ancient city of Kuluba, near the modern-day city of Cancun, revealed the relics. Early analysis of the palatial remains reveal it was vast - measuring 180ft (55m) long, 50ft (15m) wide and 20ft (six metres) high. The Mexican National Institute of Anthropology and History (INAH) claims it was inhabited for two long periods between 600-1050 AD.
