As Barbara says, while Banyan Bay is a great the two-bedroom + units would be a bit of overkill for a couple. You might look at the seafront units at Banana Beach, especially those on the second and third floors with balconies -- it's terrific to be so close to the sea.
Caribbean Villas has a beautiful setting and I think is kind of romantic, but it doesn't have a pool.
Portofino, though it's north, does have a romantic kind of atmosphere.
Cayo Espanto, of course, is romantic to the max, though it's outrageously priced.
Not on Ambergris, but Turtle Inn in Placencia is one of the most exotic and romantic places in Belize. And if you don't need to be on the beach, there are some fantastic jungle lodges with a lot of romantic atmosphere -- Ek'Tun (which recently has gone adult only to appeal more to honeymooners), the new honeymoon suites at Chaa Creek, Chan Chich and Blancaneaux.
And if you just want to be away from things, Casablanca in Consejo (near Corozal) is kinda romantic. And a deal at Us$60 or so for the best room in the house.

Since I first saw Victoria House, I have maintained that were I to have a honeymoon or an anniversary in San Pedro, I would stay at VH.
Take a look at the Casa Azul suites.
A fish and a bird can fall in love, but where will they build their nest?
