We are thinking about going to Belize/Ambergris Caye in early December, but I have some questions – maybe somebody can help us out:

1. Are there any restaurants that have vegetarian options on their menu (no fish/no meat)?

2. Diving: How is it close to Ambergris Caye (there are many stories)? What's the best way to get to the outer atolls and reefs from AC (or should we just stay there)?

3. The two hotels we are thinking about are Victoria House and Portofino. Any comments?

Both hotels are good choices-for me I would choose Portofino (in fact I have taken a suite there for tonight)but you will not be disappointed if you stay at Victoria House which is definitely on a par with Portofino.

How can anyone not eat meat or fish?

...well take country like India, with one billion people and a good chunk of them being vegetarians...

But anyway, if there aren't any choices for us, we will have to choose another destination for our vacation. We have been to Grand Cayman six times and we've always had great food there.

All restaurants have veggie dishes but Tastes of Thailand has the best.

Thanks to both Tippy and Pedro. Anybody with comments about diving? More comments regarding the hotel?

If you do decide to come to Belize, be sure to share your comparisons between Ambergris Caye and the Caymans. The Caymans have great shore snorkeling and some beautiful beaches, but I suspect you'll find San Pedro MUCH cheaper and much less developed and commercialized.

Of course you can get vegetarian food in San Pedro. Many restaurants have vegetarian options, plus there's plenty of pizza, pasta, fruit and of course beans and rice (though some may be cooked with lard or meat seasonings.)

For vegetarian menus also check out Casa Picasso,Blue Water an El DeVino for dinners. The Bamboo Shop south of town has wonderful vegetarian sandwiches and liquados. I love her grilled eggplant on wonderful whole grain breads. Most of the resturants will accomodate you in finding something. Both resorts are lovely, but Victoria House is closer to town if that is something you might find a draw back up north.
