The US has lots of hang-ups about different types of fish that Belize does not. I hear they even eat Tarpon there. You just have to know how to cook it. By the way did you know that Carp is considered a delicacy in some countries?

kwibmf not a expert on this but ,in bahamas /fla area people can die from toxic cuda ,the cuda eat a bait fish ,wich eats a poison type algae that is toxic so the food chain ,causes the problem not here in belize the algae does not flourish here !!!as I know this was shared to me by ?????I think bywaren my belizian mentor ,???any way my capt has been eating cuda since birth loves it ???I eat lobster and snapper !!! no cuda when I can eat lobster all I want !!!!!!!!!!

As Captain Jeff said Ciguatoxin is location specific. It also seems that barracuda has gotten a bad rap as any reef fish living in the effected area can have the toxin. Maybe barracuda is more likely, but Snapper, hogfish, grouper, triggerfish, amberjack, etc have all been known to cause this type of food poisoning. In any case if your tounge/mouth start to tingle or go numb while you are eating don't finish your meal. Unless, of course, you are having Beliken or One Barrel for dinner. smile

Barracuda is fine dining.

After you are done cleaning the cuda, you’re ready to prepare it for baking.

You get a good knotless pine board, big enough to hold the cuda, season the cuda on the board with salt and pepper to taste, add some garlic powder for flavor, drizzle on some vegetable oil and put the cuda on the board into an oven that has been pre-heated to 400 degrees.

Bake the cuda on the board for at least an hour or until done.

Remove the cuda and the board from the oven and set it on the counter for a few minutes to cool.

Then take the cuda off the board, throw the cuda away and eat the board.


If you must choose between two evils, pick the one you've never tried before.
