just returned and already miss three of our island staples. can anyone help with a recipe?
#1) belizean cinnamon bread........signature bakery bread from the "baker" on the south side of town. great bread........
#2) the recipe for the gravy on the pouline (fries/cheese/gravy) appetizer at "lone star" a few miles south of victoria house
#3) the shrimp omelet, "estels", beachside.

TB I believe the dish is called "poutine", the heart stopping Canadian comfort food staple. With the correct spelling you should be able to goog up a number of variations on the gravy.
