Teenah, the conch fritters at Caliente are the best, with Estels a close second. Conch ceviche just about anywhere, never really had any bad stuff. Grilled conch at Papi's or El Patio. Can't get enough of that stuff. In any form, it always tastes a little better with Belikin or rum.

I saw on the food network where they sauteed conch with some curry sauce and fresh yellow and green peppers and served with Rice and Peas jamaican style. Sounds like something Jambel could whip up.

Are there any conch farms in Belize? I know there are some huge ones in Turks and Caicos.

1 cup conch
2 cups water
1 tsp. salt
2 cloves garlic
3 stalks escallion
2 Tbsps. GRACE VEGETABLE OIL
2 Tbsps. GRACE CURRY POWDER
1 tsp. coriander
1 sprig thyme
1 small cho-cho
2 small carrots

add some onions and green pepper too that have been sauteed

METHOD

1. Place conch, water, salt, garlic and escallion in a pressure cooker and allow to cook for 25 minutes, or until conch is tender.
2. Heat Grace Vegetable OiI in a sauce pan, add curry powder and allow to heat for approximately 30 seconds, stirring occasionally.
3. Add coriander, thyme and conch along with liquid. Cut cho cho and carrots in cubes. Allow vegetables to cook until tender crisp.

Don't forget to BEAT THE CRAP out of the conch before cooking or you will have inedible rubber bands.

I had the same question here in Minneapolis. I went to the local meat market (which has a fish section) and asked them. They contacted their distributor and I had frozen conch in hand in 2 days. About $12 per pound. A pound of conch makes a good batch of ceviche. The nice thing about ceviche is that it is quick and you just have to cube the meat with a knife, no pounding needed.

P.S. If you ever get stuck going to Seaworld in Orlando, don't waste your money on their conch fritters. Absolute crap.

Pirate Bwai u nuh git to Belize enuff!

Cho Cho is basically squash. You might be able to get conch at one of the oriental markets on Federal. Just leave the daughters at home and don't go throwin up any gang signs and you'll be okay. I'm sure Whole Foods could get it too.

At $12.00 a pound wait until you go to San Pedro and ask around for it. You can get your fill then and for a lot less!

We need to meet for beers soon and no I won't cook you Conch Curry either!
