I saw on the food network where they sauteed conch with some curry sauce and fresh yellow and green peppers and served with Rice and Peas jamaican style. Sounds like something Jambel could whip up.

Are there any conch farms in Belize? I know there are some huge ones in Turks and Caicos.

1 cup conch
2� cups water
1 tsp. salt
2 cloves garlic
3 stalks escallion
2 Tbsps. GRACE VEGETABLE OIL
2 Tbsps. GRACE CURRY POWDER
1 tsp. coriander
1 sprig thyme
1 small cho-cho
2 small carrots

add some onions and green pepper too that have been sauteed


METHOD

1. Place conch, water, salt, garlic and escallion in a pressure cooker and allow to cook for 25 minutes, or until conch is tender.
2. Heat Grace Vegetable OiI in a sauce pan, add curry powder and allow to heat for approximately 30 seconds, stirring occasionally.
3. Add coriander, thyme and conch along with liquid. Cut cho cho and carrots in cubes. Allow vegetables to cook until tender crisp.
