We loved the coconut rice they serve in AC.
we tried to make it at home when we came back ,used coconut milk in a can but it turned out kind of yukky. Does any body know if we should use coconut water intead of the milk to cook the rice in ?

You can do it two ways....
Buy a whole coconut and use the water from it or.....
The way I like it is to grate the coconut meat itself in a bowl and add the amount of water I want for the rice....plus a little extra in case you need it.
Let it sit for about 30 minutes and then strain the water from the coconut into a pot.
Bring it to a boil....add your rice....stir....put a cover on it and turn the burner to low. Should be ready in about 15 or 20 minutes, depending on the kind of pot you use....LOL
I have a special pot that I only use for rice.
If you don't peel all the brown skin off the meat before you grate it....you will have brown flecks in the rice....this is normal and won't change the taste.

Forgot to tell you.....make sure you squeeze the coconut to get all the water out when you strain it...it gives it more flavor.
And don't stir it a lot....just once or twice...the less the better. Taking the lid off only lets all the good steam out...LOL

P.S. Coco Lopez is like condensed coconut milk.....great for drinks....but not rice.
The canned version of regular coconut milk that you find in the stores in the states is like evaporated milk. It might work if you water it down. Not sure....had better luck with the real coconut.

Part 3....LOL I keep forgetting things...I'm not a morning person and I haven't had enough coffee yet.

If you want a light flavor....you can also cook the rice normally and add a tablespoon or so of coconut oil. This adds flavor as well as a gloss to the rice.

I promise....this is the last word on the subject.....LOL

What else are you cooking up and when's dinner? The kids moved out, the stove needed to be replaced, so SWMBO had it removed and put an ornamental shelf in the opening. You can only eat SO many Subways.

Another thing you can do that we really like is to add a can of drained black beans to the coconut rice after it is cooked (but still piping hot). Of course you have to have about 3 cups of cooked rice or it is a little too much in the way of beans. But it is yummy with chicken.
