That now answers my question about Sharon's sushi - tried to go last week and she was closed again. Have been craving it - looking forward to it re-opening in November! Good luck on the ventures.

yes, do come back for sushi - she's one of the best sushi chefs ever. And such a passion for it. Their new drink / martini menu is awesome too *hic*. hehe

It's all ab out marketing. Talk to the owners who have been sucessful; Wild Mangos, Sunset Grill, Carumba's etc.

MVHO is that you need to win over the full time residents - we will bring the tourists.

If you can offer some dishes no one else does that will be in your favor. Like, does anyone here offer lobster thermadore?
Carb Cakes? Clam Chowder? Black Bean Soup? Fruit salads with yogurt?

Sushi chef is a trade term I guess. Does sound like an oxymoron though, huh? It connotes someone who knows the fish, the grade, quality, preparation, etc. Someone who knows how to put it together and how to pair the sauces and seasonings with the particular fish to get the right combination.

And how to make the rice sticky enough to hold together but not too sticky so that it's gummy. And how to season and cook the shrimp tempura so that it's golden and mouthwatering and not bland and chewy. Sounds simple but really more to it.

As for original dishes, so far: crab cakes, yes. Clam chowder, no but seafood bisque. Black bean soup, not on regular menu but Belizian Black Gumbo (with black beans), my twist on Chimole. And maybe soup-of-the-day special of black bean, cilantro, local bacon soup - have a great recipe for it. Fruit salad with yogurt, no but good idea! Next best thing: grilled local fruit with home-made poppy seed dressing? I like the yogurt idea though, may work on that...

It all sounds so yummy! How about a lobster roll (have the best recipe in the world, if you want it), or lobster cocktail or Lobster Benedict for breakfast (have that recipe too...). Dang, heading off for the supermarket for lobster... grin

Send on all recipes - up for trying all of them. If we use them - will give credit where credit's due! Let's see, menu could read 'novascotianuts lobster roll'. Nah, too long? How about shorten to 'Nuts Roll'? Hmmmm. Needs perfecting. hehe

Anyway, appreciate the input...
