Many of the jungle lodges in Cayo have horseback riding. Both Mtn Equestrian Trails and Banana Bank, both in Cayo, specialize in riding. BB has a new Equestrian Centre I haven't been to yet, but I would suspect that the owner John Carr, a real life cowboy in the jungle, would do something really good. I've riden at MET and loved the trails. Both MET and BB have accommodations and restaurant and bar (check and make sure BB has a bar, you may have to bring your own, not sure).
