Bwana, if you have to overnight in Houston, depending on which hotel you choose, of course, it is very likely that they will put your meat into their freezer, if it is wrapped properly and they can tag it. Back in the day, when I used to bring along my own cheese, etc., the Sheraton would give me a tag (like a baggage check) and put my foodstuff in their freezer. I'd pick it up as I checked out.
