As far as I know, Nabitunich is still there. I went out to talk to some people there, and it seemed really neat. But I've never stayed there myself.

Yes, Nabitunich is still open (or was the last time I checked, a few months ago). Believe rooms are around US$60 including breakfast. It has a very nice setting. The Juans never really promoted it.
